Easter egg nest cakes, with Betsy Bunni

Easter is Betsy’s favourite time of year, and we know why – she just loves making Easter egg nest cakes!

She’s got a great recipe to share, and she’d love to see all your creations. Just head to our Facebook or Twitter pages, and upload your pictures, or use the hashtag #BunnLeisure.

Let’s get baking!

o    75g cornflakes

o    50g butter

o    2 tbsp golden syrup

o    225g plain chocolate, broken into pieces

o    36 mini chocolate eggs

Line a 12-hole fairy cake tin with paper cases.

Place the chocolate, butter and golden syrup into a microwavable bowl or saucepan. Stir every few minutes until melted and smooth.

Remove the bowl from the heat and gently stir in the cornflakes until all of the cereal is coated in the chocolate.

Split the mixture between each of the paper cases and then press three chocolate eggs into the centre of each nest.

Chill in the fridge for one hour before eating.

Betsy Bunni’s top tip: Make a batch of Easter egg nest cakes, leave them to cool completely, then wrap in cellophane or place in a white box and tie with a pretty bow to make a thoughtful Easter gift.

Love, Betsy
