Gooey Chocolate Chip Cookies with Betsy Bunni

It’s National Chocolate Chip day, so therefore Betsy would like to share her yummy recipe with you.

Betsy’s Gooey Chocolate Chip Cookies


  • 125g butter (softened)
  • 110g light brown soft sugar
  • 125g caster sugar
  • 1 egg (lightly beaten)
  • 1tsp vanilla extract
  • 225g self-raising flour
  • ½ tsp salt
  • 200g chocolate chips (whatever chocolate you like!)



1. Preheat the oven to 180°C (gas mark 4)

2. Cream the butter and sugars

3. Once creamed, add the egg and vanilla

4. Add the flour, salt and chocolate chips, then mix together

5. Roll into walnut size balls

6. Place on ungreased baking paper

7. Bake for just 7 minutes until they are just setting – the cookies will be really gooey and delicious. But if you want them a bit more crispy, cook for 10 minutes until just golden around the edges

8. Take them out of the oven and leave to harden for a minute before transferring to a wire cooling rack (this is really important otherwise they will all break up)

9. Then eat your yummy cookies! They are delicious warm, and also store well… if they don’t all get eaten straight away.
